San-Mai is a three-layer lamination of two carbon steels, therefore it is NOT STAINLESS. This feature makes it very easy to sharpen but on the other hand it will require a little more mainteinance.Your knife will be shipped covered in a thin film of wd-40 that must be removed before any use with a degreaser. After use wash the blade using dish soap and dry thouroughly using a towel,NEVER WASH IN A DISHWASHER.Finally spread a few drops of food grade oil on the blade using your finger in order to prevent corrosion. If you plan to make a daily use of the knife you can use olive oil or seed oil, in case of less frequent use food grade vaseline oil is prefereable. The material's own nature will make it develop a patina due to contact with organic acids contained in food, this will make the blade more corrosion resistant and will give it a unique appearance.
